Pork was forbidden to the sons of Israel at Leviticus chapter 11 because they were to serve God as kings and priests between God and the nations. Pork was never forbidden to the Gentiles/nations because God told Noah at Genesis chapter 9 that he and his descendants were to eat everything that moves. This was because they had just had a global flood and nothing was growing which humans could eat. Animals can eat grass and weeds, humans can't. The clean animals which Noah was commanded to bring with him on the ark were set aside specifically for sacrifice according to Genesis chapter 8. Noah and his son Shem were Melchizedek priests of God, and would have very likely eaten of the sacrificial animal on the altar. No one else was permitted to eat of the sacrifice. So Noah's other children would have had to eat anything that moves.
